PARIS — The Michelin Guide unveiled its 2026 selection for France on Tuesday, naming new recipients of the coveted three-star rating at a ceremony attended by leading chefs and restaurateurs.
Michelin's France guide remains the most closely watched edition worldwide, awarding one, two and three stars alongside its Bib Gourmand and Green Star distinctions. International director Gwendal Poullennec has emphasised regional talent beyond Paris and sustainability-focused kitchens in recent years, a trend the company signalled would continue.
The ceremony traditionally features the loss of stars as well as gains, with several established houses under pressure to retain their ratings. Michelin inspectors, who dine anonymously, assess restaurants on ingredient quality, technique, flavour, consistency and the chef's personality on the plate.
The announcement carries significant commercial weight for French gastronomy, driving reservations and tourism to newly honoured establishments. Industry bodies including the Collège Culinaire de France have noted that star promotions can transform the fortunes of regional restaurants outside major cities.
Michelin confirmed the full list would be published on its official guide website and app immediately following the ceremony, alongside updated Green Star awards recognising environmental commitment.
